Recipe: Keto Khichdi

Low Carb Keto-Friendly Khichdi
- 1 cup Grated Cauliflower
- 1 cup Spinach Pureé
- 1 medium Tomato (diced)
- 1 medium Onion (chopped)
- 4 strings French Beans (cubed small)
- 1 small Carrot (cubed small)
- 1 small Green Chilly (chopped fine)
- 2 tbsp Soy Granules
- 1 tbsp Ginger-Garlic Paste
- 1 sprig Coriander Leaves (finely chopped)
- 2 tbsp Ghee
- 1 tsp Cumin Seeds
- 1/2 tsp Asafoetida
- 1 tsp Salt
- 1 tsp Coriander Powder
- 1/2 tsp Garam Masala Powder
Grate cauliflower into rice-like texture.
Blanch fresh, cleaned spinach. Pureé and set aside.
Heat ghee in a wok. Once hot, add cumin seeds (jeera) and allow to crackle.
Add chopped onions and sauté till translucent. Add ginger-garlic paste and chopped green chillies.
Add the powdered masalas and spices, along with the tomato. Sauté while sprinkling a little water from time to time.
Once the mixture caramelises (turns golden-brown in colour), add the remaining veggies, soy granules and grated cauliflower. Sauté for a few minutes.
Add the spinach pureé, and mix thoroughly.
Add a little water to bring the mixture to the required consistency of khichdi, and bring to a boil. Check seasoning and adjust to taste.
Garnish with chopped coriander. Serve hot.
Who said khichdi can’t be keto-friendly, eh?
